So, I guess things have been busy because I haven't taken a second to post in a week...crazy. They're calming down, though. Last week Trey and I were actually home for two out of five nights, and we got to try a new recipe, too. Next time you come over, ask us to make you fajitas...yum. :-p
This weekend was busy, but fun. Saturday I spent most of the day at my mom's doing laundry, working on administrative stuff for Kindergruppe, and practicing. Saturday night we had dinner with some NoKidding! friends and tried Wii for the first time. It was fun, but I still sucked at bowling, he he. I also think my avatar looks a lot more like me than my Mii did.
Sunday morning I sang 2 services, but now I'm off until the 15th of June! In the mean time I'm working on some musical theater stuff, but songs that require some classical training ("Green Finch & Linnet Bird" from Sweeney Todd is one). Sunday night Trey already mentioned that we played Bocce - fun!
Monday we went to Mark's house and had a nice time, too. After watching the Cubbies win and enjoying some Schmeisser's Patties and Fresh Fruit Smoothie cheesecake, we played their new game - The Planet interactive DVD game, based on the The Planet series on Discovery. Very cool, but I totally sucked. Oh, well.
One final thought on the weekend, Trey and I brought several wines for Saturday night as well as a side dish. For some reason I really wanted Caprese salad, and that trend seemed to keep up for the whole weekend - I ended up bringing it to our picnic on Sunday and to Mark & Karen's. While the mozzarella is NOT the same as the Italian stuff, the stuff I found has a good texture, and doctoring it up with a little balsamic vinegar makes it taste better. I am still on a search for some better stuff...preferably some stuff that is still in water at the time of purchase.

Fresh fruit smoothie cheesecake sounds soooo good! So does the caprese salad. I've never made it so never had to think about the mozzarella. Good luck finding some good cheese :)
I, too, had a very recent caprese salad craving. And days later a coworker fixed it with some leftover fresh tomato (not in season) and fresh moz (made in the lab the week before). Fabulous!
You can find mozz in water in any grocery's specialty cheese section. Not sure if it's the quality you're looking for, but it's considered fresh, often imported from Italy, and in water.
On a note related to mozz, I love buratta. I have never found it retail, even in specialty cheese stores. I made it once, and have had it fresh made from some restaurants (where I learned what it is). I know one restaurant that imported it, but had dificulty with supplies so they got rid of it. I don't know what distributor they used, but even being in the food industry working with cheese importers, I can't find it through them, either. It's essentially a mozz ball with a mascarpone center. mmmmm!!! Delicious!!
Your mozzarella does not come in water? I mean, does it dry out? This is so strange...
I have caprese every other day or so. It's one of my favorite dishes!!! yum!
